A beloved fiancé, father, son, brother and friend unexpectedly passed away peacefully Thursday, May 18 (14), 2023 at Mercy Hospital. Nick was born March 30, 1993 in Joplin to Gary and Shannon (Carey) Simon.
He was preceded in death by his aunt Christina Simon, grandmother Debra Booe, grandmother Lois Williamson, grandfather Frankie Carey, grandfather Bill Simon, uncle Abe Khouri, cousin Hailey McWherter and unfortunately, several other family members.
Nicholas is survived by fiancé Nichole Clark, daughter Audriana Simon, stepdaughter Cameo Clark, parents Gary and Shannon Simon, brother Zachary Simon, Zack's daughter Athena Simon, uncle Jess Carey (Nikki), aunt Debbie Kay, aunt Kathy Gable, uncle Gale Carey, uncle Frankie Carey, aunt Kelly Hock, aunt Tonya Stanfield (Steve), cousins: Kurt (Tracy) Carpenter, Ronnie (Ashley) McDowell, Elizabeth Lake, KD (Jonathan) Russell, Charlie McWherter and many others not listed, whom he loved each and every one very dearly.
Nick will always be remembered for being a person that would (literally) give you the shirt off his back! He was a very hard worker. He enjoyed working on anything with a gas powered engine and was determined to get it running! He was very passionate about two trucks he owns. One belonged to his late Aunt Chris and one belonged to his late Grandpa Bill.
He was the Dairy Manager at Food 4 Less and enjoyed working there.

The Mercy Hospital staff was very accommodating and do amazing work for the community! There's no doubt they did everything possible to accommodate Nick and his family. The staff went above and beyond and we're very Thankful!
